NEWS AROUND THE FARM
It’s been a busy time here on the farm with a couple of big projects underway. One of the main jobs recently was digging a new pond for irrigation. It’s a major improvement for us and will help provide a more reliable water source, especially during dry periods. It should make a real difference in how we manage water across the farm going forward.
Alongside that, we’ve been doing a lot of planting. This season we added around 20,000 new trees across the properties. It’s a big step, but an important one—helping build healthier soil, improve biodiversity, and strengthen the long-term resilience of the land.
It’s a lot of work in the short term, but it all ties into a longer view of improving and sustaining the farm for years to come.


RECIPES

Apple Walnut Bread
Serves/makes 24 Ready in 1-2 hours
Ingredients
2 cups sugar
3/4 cup vegetable oil
2 eggs
2 teaspoons vanilla extract
2 cups flour
1 1/2 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1/4 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
4 cups apples, peeled and diced
1 1/2 cup chopped walnuts
Directions
Preheat oven to 350 degrees F. Grease and lightly flour two loaf pans
Combine sugar, oil, eggs, and vanilla in a large mixing bowl. Whisk well.
In another bowl combine the flour, cinnamon, nutmeg, baking powder, baking soda, and salt.
While stirring, add the flour mixture to the egg mixture and stir until just combined. Do not overmix. Stir in the apples and walnuts.
Pour batter into the prepared loaf pans. Place in the oven and bake at 350 degrees F for 55-65 Minutes or until set in the middle.
Remove from the oven and let cool in the pans for 5-10 minutes then turn out to a wire rack and let cool completely before slicing and storing. Store in an airtight container. This bread freezes well.
